(Purple Soup)

Veloute Violet

Ingredients

  • 1 onion, sliced
  • 200g red cabbage, finely chopped
  • 5 carrots, medium size, sliced
  • 3 potatoes
  • 1 tsp cumin
  • Sea salt & pepper to taste
  • 1 tbsp extra virgin olive oil
  • 1.5 L water

Preparation

1- Cook gently the onion in olive oil. Add carrots and red cabbage, stir for 2 minutes on medium heat, and add cumin
2- Add water, salt & pepper. When boiling, cook on medium heat for 15 minutes.
3- Add potatoes and cook for a further 30 minutes, medium heat.
4- Blend and serve.
