Supercharged Salmon Salad

This salad is supercharged with protein, omega-3, and a load of regenerative phytonutrients, vitamins and minerals. The bitterness of the radicchio and rocket will set your digestive system up for optimal digestion. And it tastes delicious!

– Ingredients –

Salad

  • 2 salmon fillets, cooked
  • 2 cups baby kale, well packed & massaged
  • 2 cups rocket, well packed
  • 1 cup radicchio, roughly chopped
  • 1 avocado, peeled and diced
  • ¼ cup pumpkin seeds
  • 1 tablespoon olive oil
  • Sea salt
  • Black pepper

Dressing

  • ¼ cup olive oil
  • 1 lemon, juiced
  • 1 shallot, minced
  • 1 clove garlic, grated
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • 1/8 teaspoon black pepper

– Preparation –

In a small jar or bowl, add the dressing ingredients, whisk until well combined and set aside.

Separate kale, arugula, radicchio, avocado and pumpkin seeds across two bowls.

Cover the salads with the dressing, dividing it evenly across the bowls, and toss until the salad is well coated with the dressing.

Top each salad with a fillet of salmon and season with additional salt and pepper to taste.

– Tip –

You can add some diced tomato and corn to add colour and pack this salad with vegetables
