With Feta, Spinach, and Watermelon

This salad is a Summer Celebration winner. Green fresh mint and baby spinach complement the red of the watermelon and strawberries in a melting pot of summer savours. 

Before serving, drizzle generously some extra virgin olive oil and a squeeze of fresh lemon juice. 

Serves 6


  • 1 kg cold seedless watermelon (without skin)
  • 60 g baby spinach leaves
  • 250 g feta or labneh
  • 1 bunch of fresh mint
  • 1 red onion, thinly sliced
  • 2 lemons
  • 2 punnets strawberries
  • extra virgin olive oil to drizzle
  • pistachio


Chop the watermelon into bite-size and arrange it in a serving bowl with the baby spinach.

Massage the red onion with the juice of one lemon and a pinch of salt. Leave for five minutes to slightly pickle and spread over the watermelon. 

Add the freshly chopped mint leaves and feta. 

Mix the strawberries with the juice of one lemon and spread over the watermelon salad. 

Add generously some extra virgin olive oil before serving. Top with pistachio.
