No Peel Pumpkin

I love pumpkins but they are so difficult to peel that I sometimes postpone their cooking. Until now! Coming back from sailing with some friends, I realized that peeling does not need to be.  Here is the trick of my friend Cecilia, I’d like to share with you:

1- Fill your pressure cooker with 3 cm of water

2- Place the pumpkin in the steamer basket, above the water, and cook about 15 to 20 minutes, until the flesh is tender.

3-  Let it cool down before spooning the flesh.

The flesh is now ready to be prepared into puree, gratin or soufflé.  Or you can freeze in individual portion for future use.
