Mood Boosting Turkey Dish

Serotonin is your “feel good” chemical which produces happy feelings, promotes relaxation and increases resilience to stress To increase this terrific neurotransmitter without turning to cupcakes and candies, you need to nourish your body with healthy fats (olive oil), protein and tryptophan-rich foods (turkey breast and mushrooms) with enough magnesium and vitamin B6 (spinach and pumpkin seeds).

Serves :4
Ingredients
- 4 organic turkey breasts
- Juice of 2 limes
- 2 cloves of garlic
- 200g of Greek yoghurt
- ½ bunch of coriander
- 4g of cumin powder
- 40g fresh ginger
- 1 tbsp extra virgin olive oil
- 3 cups of sliced fresh mushrooms
- 2 garlic cloves
- 2 tsp extra virgin olive oil
- 200 – 250 g of spinach
- Sea salt and freshly ground pepper to taste
- Some pumpkin seeds
Preparation
The day before, remove the breast’s skin and prepare the marinade with lime juice, garlic, yoghurt, coriander, cumin and ginger. Lay the turkey breast in half of the sauce and marinate overnight.
On the day, drain the breast and cook them slowly in a pan (avoid overcooking).
In the meantime, sauté the mushrooms in olive oil until tender (about 2 minutes). Add garlic and cook for 1 min longer. Add spinach in batches, cook and stir until wilted. Season with salt and pepper.
Serve the turkey breast with the rest of the sauce and the mushroom and spinach sauté. Sprinkle with some pumpkin seeds.
