This pesto is a wonderful way to balance your hormones after 40. The zinc and magnesium in the sunflower and pumpkin seeds mixed with some high-selenium Brazil nuts, the detoxifying property of coriander and the vitamin C boost from the lemon juice will support optimal hormonal metabolism and detoxification, while you enjoy a delicious dip.
Serve with some vegetable sticks – celery, carrots or cauliflower.
- 4 cloves garlic
- 1/3 cup Brazil nuts
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 1 cup fresh coriander
- 1 cup parsley
- 2/3 cup cold pressed olive oil
- 4 tablespoons lemon juice
- Big pinch of sea salt and or dulse flakes to flavour
Soak the seeds and nuts overnight.
Process the parsley, coriander and olive oil in a blender until chopped.
Add the garlic, nuts, seeds, salt/dulse and lemon juice and mix until the mixture is finely blended into a paste.
Store in dark glass jars if possible. It freezes well also.
