Cauliflower Taboulé

Perfect recipe if you feel like raw cruciferous vegetables or crunchiness. Cauliflower is rich in sulphur and boost your antioxidant status. With added parsley and mint, it supports your liver for better detoxification and stimulates your digestion.

Serve: 4

  • 1 Small Cauliflower
  • 1 Cucumber
  • 3 Tomatoes
  • 1 Spanish Onion
  • 1/2 Parsley Bunch
  • 2 Mint Sprigs
  • 1/2 Lemon
  • 4 Tbsp Extra Virgin Olive Oil
  • Celtic Salt, Freshly Ground Pepper

Wash cauliflower and blend in a mixer until it looks like semolina.

In a bowl, add lemon juice, olive oil, salt & pepper to blended cauliflower. Mix well and leave one hour in the fridge.

Peel cucumber, wash de-seed tomatoes. Cut in small cubes.

Rinse parsley and mint and finely chop. Peel the onion and cut in thin slices. Mix all ingredients with cauliflower mix. Add salt & pepper to taste.

Serve chilled.

Winter version: Steam cauliflower for 3 to 4 minutes before blending.
